HOMEMADE ALMOND BUTTER

We are big almond butter fans in my home! Well almond butter and any other kind of nut butter for that matter. Though lately I haven't been buying it at all because I find it's either too expensive for such a small jar, or there are additional additives I don't want to eat or give to Oslo. So I was in the grocery shop the other day and saw almonds were on promotion, and I jumped at the idea of making my own almond butter at home for much less. This is a very new recipe for me, but it is so quick and easy to make, and I am thrilled with the way it turned out. Oslo even loved it so much he was eating it by the spoonful.

Almond Butter

INGREDIENTS

500g whole almonds
Glass jar
Food processor or Hand mixer

INSTRUCTIONS

Creamy: For a creamy almond butter use a food processor and blend until all the lumps are gone. This is best spread on a rice cake or toast, or try adding it to a smoothie. The taste is light enough you won't taste the almonds in the smoothie, but you will get all of the nutrients.

Chunky: I prefer my almond butter a bit chunkier, especially when giving it too Oslo. For a chunky almond butter I use a hand mixer and add a couple teaspoons of olive oil to help blend a little easier. For a quick snack for Oslo, I take small bits of the butter and roll them into balls. He loves to pop them in his mouth and mush them around. I love to top my rice cakes with a heap of the butter for a delicious and super nutritious afternoon snack.

Once blended put the Almond Butter into a glass jar, seal, and keep it refrigerated.

That's all! So simple isn't it? This Almond Butter is so healthy, it has tons of protein which will give you so much energy, and there is no additional sugar. Coming from a new Mama, this is the best post pregnancy snack I can imagine. I hope you love it as much as I do. Enjoy!
