MIMI THORISSON EST MAGNIFIQUE.

If you don't already know of Mimi Thorisson or her amazing blog Manger then you are missing out. Her and her family, which consists of her husband, four children, two step children, and fourteen dogs moved from Paris to live in the countryside in Médoc. When she made the move she decided to capture her daily life there and share her unbelievably delicious recipes with the world. She has become very successful through her blog, which is no wonder because once you try making one of her dishes you have to go back for more. She is the essence of France and expresses it completely through her cooking. I am waiting so patiently for her to come out with a cookbook, so I can cook with Mimi every night. 

I am pescatarian so I can't enjoy a lot of her dishes, but my favourite recipe so far is her Flammekueche (onion tart).


Ingredients:
1 ready-made 230 grs puff pastry (I use Herta – pâte feuilleutée), but you can also use ready-pizza dough
150 ml thick crème fraîche (sour cream)
50 grs fromage blanc
3 small onions (sliced finely)
150 grs finely diced bacon (I didn't use the bacon)
1/2 tsp ground nutmeg
1 tbsp canola oil
Pre-heat the over to 210° degrees celsius/425 F.
In a bowl, mix the crème fraîche, fromage blanc, nutmeg and canola oil. Pre-fry the diced bacon (lardons) in a frying pan for 5 minutes. Set aside. Slice the onions finely. Roll out the pastry (either rectangle or round shaped) and fold the borders (1 cm). Spread the cream mixture on the dough evenly, sprinkle onion and bacon all over. Finish with a dash of salt and pepper. Place on a parchment lined baking tray and bake in the middle of the oven for 12-15 minutes. Serve with a salad.
